Jamaican Curry Shrimp

 

Here's a flavorful Jamaican Curry Shrimp recipe that combines the spicy and savory flavors of curry powder, herbs, and coconut milk for a delicious dish. It's quick, easy, and perfect with rice or roti.


Jamaican Curry Shrimp Recipe

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 tbsp Jamaican curry powder
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped (optional for extra heat)
  • 1 bell pepper, sliced (red or green or both)
  • 2 stalks scallion (green onion), chopped
  • 1 tsp fresh thyme leaves
  • 1/2 cup coconut milk
  • 1/2 tsp ground allspice (pimento)
  • 1/4 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 tbsp olive oil
  • 1 small tomato, chopped
  • 1/2 cup water or seafood stock
  • Juice of 1/2 lime (to season shrimp)
  • Chopped fresh cilantro or parsley (optional for garnish)


Instructions:


Season the shrimp:

  • In a bowl, toss the cleaned shrimp with lime juice, a pinch of salt, and black pepper. Set aside.


Cook the vegetables:

  • Heat 2 tablespoons of vegetable oil in a large pan over medium heat.
  • Add the chopped onion, garlic, bell pepper, scallion, and thyme. Sauté until softened, about 3-4 minutes.


Add the curry powder:

  • Stir in the Jamaican curry powder and allspice, allowing the spices to toast in the oil and release their flavors for about 1-2 minutes.


Make the curry sauce:

  • Add the chopped tomato, scotch bonnet pepper (if using), and coconut milk to the pan. Stir well to combine.
  • Add the water or seafood stock, bring to a simmer, and cook for 5 minutes to allow the sauce to thicken slightly.


Cook the shrimp:

  • Add the seasoned shrimp to the curry sauce. Stir and cook for about 3-5 minutes, or until the shrimp turns pink and opaque. Be careful not to overcook the shrimp.


Adjust seasoning:

  • Taste the curry and adjust the salt and pepper as needed. If you prefer a thicker curry, simmer for an additional minute or two.


Serve:

  • Garnish with fresh cilantro or parsley if desired. Serve hot with rice, roti, or steamed vegetables.
